An Update

Whew! I haven't updated my blog in over a month. I guess I've been so busy with work and school that the blog has taken a backburner. I'm definitely ready to be done with school. It seems like all I do is homework. I'm currently working on a retirement project for my math class. 5 more weeks!

I think I finally decided what I want to do for a career, and that is teach elementary school. As soon as I get a spare second, I'm going to apply for the Alternate Teaching Licensure program through the State of Utah. One of the main reasons that I chose teaching is because it is so family friendly. I like the idea of getting off work at 3:30 and having my summers off. Plus, I think that I'm gifted at it, and should use my talents.

Other than that, I've just been having a fun going on dates. But, that is another blog for another time, and I'll have to tell you about him later.

I love you Grandma Joyce

I wanted to share some of my favorite memories of my Grandma Joyce today. I will always remember visiting her and my grandpa at their home. My grandma was a wonderful cook, and always a wonderful hostess. I remember her donuts and caramel apples on Halloween. She loved to celebrate and made two kinds of cake for my grandpa's birthday. My dad told me a story about my grandma that warmed my heart. When my dad was growing up, needy people would knock on the door and my grandma would always feed them a warm meal no matter what.

I loved playing in my grandma's yard. She had a wonderful lilac garden. My grandma was such a wonderful grandma to me and her other 19 grandchildren. She loved the Lord with all heart, and brought so much good to the world. She wrote beautiful poems, and I'll share this one with you.

42 More Days Until Spring..


I just came in from the cold, dreary weather. I'm dreaming of springtime tonight, and there's only 42 more days! This weekend while I'm indoors, I'm going to think of warmer weather. I think I will paint my toenails bright pink, wear some bronzer, and put on a colorful cardigan. I might even buy myself a bouquet of pink tulips. (My favorite) It's been one of those awful weeks, and I think I deserve it!

I'm Graduating in May!


I'm happy to report that I'm graduating from the University of Utah on May 8th!!

This has been a long journey for me. Some people handle school no problem. I on the other hand, had a hard time juggling school with working full time, health issues, dating, and well...just life.

I can honestly say that this is one of my proudest accomplishments, and that I've truly discovered the meaning of perseverance.

Superbowl Sunday






I had a fun time watching the Superbowl at my friend Mary's house. I have to admit, I spent more time talking and laughing than actually watching the game. But, the parts of the game I did watch were pretty good. The commercials weren't bad either.

We saw history being made today with inauguration of President Barrack Obama. I wasn't fortunate enough to actually get to watch the inaguration as I was working, but I sure came home and watched the news this evening! I'm proud to be an American today.

I love you Grandma Dolly


I had a really hard day today. After getting a phone call from my dear mom, my sister Erin and I went to visit my Grandma Dolly today. She doesn't have much time, and we had to say our good-byes. We spent a long time with grandma today just holding her hand and kissing her cheek and telling her how much we love her. I'm fortunate that I was allowed that time today with her. I was thinking back today on all of the happy memories that I have with her. They are all mostly from when I was a little girl. I remember spending many fun weekends at my grandma's house while my mom and dad got to spend a weekend away together. Grandma Dolly would always create such fun memories with us. I remember playing in her pool(there was even a time when Erin had to wear my grandma's swimsuit because she forgot hers, and she was so livid.) My grandma would buy us special drumstick ice cream cones and we'd eat them on her patio. I remember playing on her staircase for hours with this little orange Buddha man. She always had very fun tub-toys and I remember playing in her big tub with those. She would cook us the most wonderful meals, and whenever I eat her recipe of spaghetti or chicken cordon bleu I will think of her. My grandma loves family together time, and we had many happy summer afternoons with all of us together. I love you Grandma Dolly, and I will miss you so much.

A Yummy Winter Meal


I made this "Chicken Tortilla Soup" recipe on New Years Eve for Rob. It was yummy and pretty easy to make. I made some homemade salsa to go on top. All you do is cut up a few tomatoes, add some diced onions, and chopped cilantro. Mix it up in a bowl and squeeze a fresh lime on top. Try it and tell me what you think!

2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons minced garlic
2 jalapenos, finely diced
6 cups low-sodium chicken broth
1 (14.5-ounce) can fire roasted diced tomatoes
1 (14.5-ounce) can black beans, rinsed and drained
3 chicken breasts, boneless and skinless
2 limes, juiced, plus wedges for garnish
Salt and freshly ground black pepper
1 cup roughly chopped fresh cilantro leaves
1 (8-inch) flour tortilla, grilled, cut into thin strips
1 avocado, pitted, sliced
1 cup shredded Monterrey cheese
In a large saucepan heat the vegetable oil. Add the onions and cook for 2 minutes. Once the onions have softened add the garlic and jalapeƱos and cook for another minute. Pour the chicken broth, tomatoes and beans into the pot and bring to a boil. Once at a boil lower heat to simmer and add your chicken breasts. Cook the chicken for 20 to 25 minutes. Once chicken is cooked remove from pot. When cool enough to handle shred it and set it aside. Add lime juice and fresh cilantro to the pot. In a serving bowl add a mound of shredded chicken. Ladle soup over chicken and top with a lime wedge, grilled tortilla strips, avocado slices and cheese.

Happy New Year!!


Happy New Year friends!

I thought I'd share a few of my New Years resolutions with you.

*Organize my cupboards and closet. I'm actually going to dig in on this as soon as I'm done here.

*Stay healthy. I had a rough time with my health in 2008, and I'm now past that and finally healthy. I'm going to stay on top of my doctor's appointments and medicine so I can stay that way!

*Exercise more. I love the "runner's high" feeling of endorphins kicking in. I think I have the eating healthy routine down pat, but need to step up the exercise.

*Read more. I always have my nose in a book it seems, and I want to compile a list of best-sellers to read this year.

*Graduate from college. I'm about 3 classes away, and so I can see the light at the end of the tunnel.

*Go on a vacation. I don't care where I go, just as long as I can get away for a few days.

*Continue to have a balanced life. This means eating right, getting enough sleep, exercising, and creating fun.

*Live, laugh, and love more.
